Understanding the process and componets of how coffee is grown and processed opens the door to new ways to brew and appreciate the unique flavor profiles offered. 

Origin & Flavor

Every growing region brings its own character:

  • Ethiopia — Bright, floral, citrus and berry notes; ideal for light roasts.

  • Colombia — Balanced and sweet; excellent across light to medium roasts.

  • Brazil — Smooth, nutty, chocolate‑forward; perfect for medium to dark roasts.

  • Guatemala — Cocoa, spice, caramel sweetness; shines at medium roasts.

  • Sumatra — Earthy, herbal, syrupy body; best for medium‑dark to dark roasts.

If you’re new to roasting: Colombia, Guatemala, and Brazil offer the most forgiving learning curve.

Processing Method

How the coffee cherry is handled after harvest influences both flavor and roast behavior:

  • Washed — Clean, bright, consistent; the easiest to roast evenly.

  • Natural — Fruity, sweet, sometimes wild; may roast slightly unevenly due to natural sugars.

  • Honey — Smooth and sweet; caramelizes faster, so use gentler heat.

Altitude & Density

Higher‑altitude beans are denser and need more heat early in the roast:

  • High altitude (1,600m+) — Complex and bright; thrives with strong initial heat.

  • Mid altitude (1,200–1,500m) — Balanced and sweet; great for beginners.

  • Low altitude (<1,200m) — Softer beans that roast quickly; ideal for darker profiles.

  • Light roast: Ethiopia, Kenya, high‑altitude Central America

  • Medium roast: Colombia, Guatemala, Peru

  • Dark roast: Brazil, Sumatra, lower‑altitude Central America
